This assessment task is for the unit of competency SITHKOP001 Clean kitchen premises and equipment. The assessment will consist of three parts: Assignment, Practical Observation, and an additional assessment that has not been specified. The purpose of the assessment is to assess the student’s knowledge of hygiene and cross-contamination issues, different types of cleaning and sanitizing products, safe practices for using and storing these products, safe operational practices for cleaning equipment, understanding of safety data sheets, cleaning and sanitizing methods that avoid risk to food, personal protective equipment, safe manual handling techniques, environmental impacts of cleaning, and correct and environmentally sound disposal methods for kitchen waste. The assessment will be conducted in a location specified by the RTO, and the student will need to bring a pen, paper, calculator, Safety Data Sheet, Manufacturer’s Instructions, and Cleaning Schedule Templates. The student will be given instructions for assessment and WHS requirements by the trainer and will be given feedback on their performance.
